Development is sustainable if it meets the needs of current generations without compromising the resources of those who come after us. Castello Monaci was among the first wineries in Salento to affirm the importance and value of protecting the territory. Already in 2004 it formalized its commitment by achieving ISO 14001 international certification.
Castello Monaci believes in an even broader concept of sustainability, which also involves production management in order to minimize its carbon footprint and the impact of its processes on the environment.
Nature is an integral part of what we are, the lifeblood of our work. Protecting the territory means protecting the people of Salento, and the future of those who live and work here.
The vineyards of Castello Monaci are cordon-trained and spur-pruned, according to strict guidelines, to minimize the agricultural impact on the environment and natural resources.
• Castello Monaci dedicates great attention to its production methods:
• It uses only clean electricity, generated by in its own photovoltaic system or recovered from other renewable sources.
• It preserves and maintains green areas, which become carbon dioxide tanks, thus reducing CO2 emissions.
• It monitors and controls water efficiency, to reduce water consumption in the cellar and in the rows.
• It manages waste using specific recycling processes, to optimize efficiency.
• It supports biodiversity, allocating two hectares of land to disposable crops (sunflowers) in order to encourage and provide food for wildlife.
• Harvesting is done at night, to take advantage of the lower temperature, naturally cooling the grapes.
The barrique cellar is hewn from tufa, a natural insulator that protects the wine during ageing. Finally, it contributes to the growth of the area and its social fabric, by employing local people. Castello Monaci is part of the community that surrounds it, with duties often handed down from father to son. An example is the family of agronomists, who have worked on the estate for three generations.
